Apache Potato
The Apache has a very striking appearance. It has a warm red skin dotted with cream coloured patches. It is small and round in shape with a slightly waxy texture.
Scrubbed and cooked whole it makes a delicious change from the conventional ‘peeled and cut’ roast potatoes.
These contrasting colours stay bright if blanched first before roasting whole in their skins and you are rewarded with an excellent, almost sweet, buttery, chestnut flavour.
